Eye Poppin' Goodness!

Come along with me on a journey to Germany for some delectable breakfast fare...
Okay, we won't really be leaving my kitchen for this one. But I just had to share with you a favourite recipe of ours ~ Pop Eye Pancakes!

Here are the ingredients:
1 stick of butter (I prefer unsalted)
2 eggs
1/2 cup flour
1/4 cup milk
pinch of salt
lemon wedges
dusting sugar
(Do you see that I'm using organic flour, but nothing else organic? Go figure.)
Pre-heat your oven.
Divide butter into pans.
I used a 9x13 and two pie pans, which always give the best results.
Place pans in oven to melt the butter.
Mmm, tastes like buttah!

Whip the 2 eggs in the blender to fluff 'em, then add the milk and salt and flour.
Whip it, Whip it good!
Or, be lazy like me and make your toddler do it by hand in her princess p.j.s.
See? She even has flour on her cheek!
Note: I whip up a seperate batch for each pan and I double the recipe for the 9x13 pan.

Pour batter into hot, buttery pan!
Place in oven for about 20 minutes. Often mine are done early.

Oooh! See them pop!
Note to self: the metal pie tin does not work well.

Squeeze lemon all around, dust with sugar and voila!
These are hard to describe... so buttery... crispy edges... melt in your mouth goodness.
Scrumptiousness perfected!


Serve with bacon and fruit and you'll have happy faces smiling back at you.

We had these for breakfast yesterday. :D

A few weeks ago I commented on somebody else's post about these - except we all call them different things. My recipe calls them German Pancakes. My mom has always called them Puff Pancakes. I've never squeezed lemon on them, and I don't think I've ever used powdered sugar for my kids. We top them with syrup or honey or jam, like regular pancakes. My mom always bakes them in glass pie plates, as you did. Around here, I use our largest rectangular glass casseroles - 11x14? I have to make 2 of them, and, as in yesterday's case, a 3rd in the 9x13.

My recipe differs slightly, but probably not terribly noticeably.

Here's my recommendations:
When you can get it, substitute commercial egg nog for the milk. Not only is it super-yummy, but it makes them even fluffier!
If you forgo the lemon wedges, homemade apple pie filling makes an EXCELLENT topping. :D

Yes, I know them as German Pancakes too! My girls call them "Pop Eyed Pancakes". ;-D

We eat them with honey and syrup also and fruit compote which is super yummy. I'm the only hardcore one who HAS to have them with lemon and p.sugar.

The eggnog sounds especially yummy for a Christmas morning breakfast. I'll definitely try that!

Yep we call them german pancakes too, but I like Pop Eye pancakes better :) The egg nog sounds like a yummy thing to. And I will have to try it with powdered sugar sometime.

We have been making these from a recipe that I got at the Oregon Heritage Apple Farm! In their recipe you put thinly sliced and peeled apples in the melted butter and then pour the pancake mixture on top. You also sprinkle top with brown sugar. It is very very good. I like your recipe though because sometimes I forget that I can make it without the apples!

I love the pictures of each process! So cute!

These were my favorite as a little kid. They were called German pancakes in our house (passed down through my dad's side) until I renamed them "hats" - because sometimes they grow to look like a cowboy hat. ;)

ahh, yes, when I married David he and his family introduced me to these only they call them Dutch Babies and the recipe is 3/4 cup flour, 3/4 cup milk and four eggs. We melt the butter in a large frying pan (that can also be placed in the oven) and then put the batter over butter and bake at 400 for 20 minutes. At first I thought it was going to be disgusting, but it has been a "regular" in our house from the get go. It is a favorite for the "I have no idea what to make" days! Love and Miss you.
